Sweet and Spicy Stir Fry






     A little sweet a little spicy a little love equals a perfect meal.  This unbelievable high protein dish will put a big smile on your face and fun in your belly.  These fabulous flavors weigh in at 277 calories, 10g net carbs, 39g protein and 7.6g fat.  Each of these 6 servings are a healthy way to enjoy the Chinese flair guilt free.  :)

Ingredients for 6 servings~
2 Tablespoons Sesame Oil, divided
1/2 sweet yellow Onion, diced
1 Tablespoon chopped Garlic
1 Tablespoon fresh Ginger, chopped
Dash Cayenne
1 pound Broccoli, chopped into florets
1 Red Bell Pepper, chopped
2 pounds Chicken Breast, chopped
2 Tablespoons Flour, use Gluten Free if desired

1 teaspoon Sriracha, add more to desired taste for increased heat
2 Tablespoons Lite Soy Sauce
2 Tablespoons Apple Cider, Red Wine or Rice Wine Vinegar
2 Tablespoons Peanut Butter Powder
1/4 cup Sukrin Gold Brown Sugar Erythritol
1 teaspoon Corn Starch, mixed with 2 teaspoons Water

     Heat 1 Tablespoon Oil in skillet, add Onion, Garlic, Ginger and Cayenne til golden brown.  Then add Broccoli and Bell Pepper til crisp tender, add lid to cook faster.  In separate skillet, heat remaining Tablespoon Oil, dust Chicken with Flour and add coated Chicken to hot Oil til cooked thru.  Meanwhile, add second set of ingredients to saucepan and bring to simmer, stir continually til thickened, set aside.  Once Chicken is done, stir in Broccoli mixture and Sauce til well combined.  Divide into 6 equal servings and best served over my Simple Fried Rice.  Enjoy  :)
