Bacon and Eggs







     Don't you love to see kids in the kitchen!?  I do!  This is a fun simple breakfast recipe that young to old can master in a flash.  And, if you want to impress mom and surprise her with breakfast in bed, this is the ticket.  Each of these protein wonders are only 134 calories, ZERO carbs, 11g protein and 9g fat.  Start your day right with Bacon and Eggs, fridge to table in less than 30 minutes!

Ingredients for Bacon and Eggs~
Turkey Bacon~as many slices as desired
Jumbo Eggs~as many Eggs to match slices of Bacon
Dash Salt
Dash Pepper
Shredded Cheddar Cheese~as many teaspoons to match Bacon and Eggs
Sliced Green Onion, as desired for garnish

     Line cupcake tins with Silpat liners (or cupcake liners sprayed with cooking spray).  Put a slice of Bacon around the inside of the liner, repeat for as many as you are baking.  Bake at 400 for 10 minutes.  Remove and add Egg to center, season with Salt and Pepper, continue to bake at 400 for another 15 minutes.  Note: if you are using a smaller Egg, baking time will be reduced.  Remove from oven, add a teaspoon of Cheese per Egg cup, garnish with Green Onion.  Enjoy  :)
