Parsnips and Carrots







     With cooler temperatures, new seasonal produce comes calling.  Such is the case with Parsnips!  Whats a Parsnip you ask!?  The Parsnip is a root vegetable, closely related to the Carrot and becomes sweeter in flavor after the Winter frosts.  These are great for roasting, especially when paired with the Carrot, they also make a wonderful accompaniment to any main course.  If you haven't tried them, consider this your official challenge!

Ingredients~
Parsnips, cleaned and diced
Carrots, cleaned and diced
1 Tablespoon Olive Oil
1 Tablespoon Honey, (more if desired for additional sweetness)
Dash Salt
Dash Pepper

     Toss together cleaned and diced Parsnips and Carrots with Olive Oil and Honey, add to parchment lined roasting pan, season with Salt and Pepper, bake at 425 for 45 minutes, stirring after every 15 minutes.  Enjoy  :)
