Roasted Butternut Squash and Pears







     Is there anything better than roasted anything!?  Nope!  One of the best things about Fall is all the new things we put in our ovens, such is the case with Roasted Butternut Squash and Pears.  Sounds delightful, huh!  And for good reason, it was a total smash!  If you love the sweet, salty, tangy combo of flavors, then this will be your new favorite side dish.  Each of the 4 servings are only 177 calories, 25g net carbs and 2.7g protein.  As an extra bonus, this will add elegance and charm to any special occasion!

Ingredients for 4 servings~
1 Tablespoon melted Nutiva Buttery Coconut Oil
1 large peeled and cubed Butternut Squash (about 1pound 2oz)
1 Tablespoon Balsamic Vinegar
Salt and Pepper to taste
2 medium diced Pears (about 12oz)
1 Tablespoon chopped Walnuts
2 Tablespoons Gorgonzola crumbles

     Add melted Coconut Oil and cubed Squash to Pam sprayed roasting dish and stir til Squash well coated, sprinkle with Balsamic Vinegar and season to taste with Salt and Pepper.  Bake at 375 for 35 minutes, removing once midway to stir.  Then add diced Pears to pan and roast another 15 minutes, remove and add Walnuts and continue to roast another 10 minutes.  Remove from oven and add cheese crumbles right before serving.  Enjoy  :)
