Coconut Curry Pumpkin Soup








     If you have never tried Pumpkin Soup then you are really missin' out!  If you have never tried my Coconut Curry Pumpkin Soup then you are committing a crime and must be punished.  Your retribution will be to get in your car, drive to the store, buy the ingredients and get to cookin'!  To say this turned out good would be a gross understatement.  Not to mention each of the 6 cup servings are only 286 calories, 13g net carbs and 29g protein.  Nothing more comforting than to nestle up with a warm hearty bowl full of flavors!  :)

Ingredients for 6 cup servings~
1 Tablespoon Extra Virgin Olive Oil
1 medium diced Onion
1 Tablespoon chopped fresh Garlic
Dash Cayenne
1.5 pounds finely diced Chicken Breast
1 teaspoon LB Jamison's Chicken Soup Base ( can sub with 1 Chicken Bouillon cube)
1 cup Water
5.46oz can Thai Kitchen Coconut Milk
8oz container Hope Thai Coconut Curry Hummus (sub with Hummus of choice)
15oz Pumpkin
7oz 2% Fage Yogurt
Cilantro for garnish as desired
Pumpkin Seeds for garnish as desired

     Heat EVOO in large skillet, add Onion, Garlic and Cayenne til golden brown, then stir in diced Chicken til cooked thru.  Stir in Chicken Base til melted and blended in thoroughly, stir in water to incorporate.  Then finish by stirring in the Coconut Milk, Hummus and Pumpkin.  Serve by the cup full, add a dollop of Yogurt and sprig of Cilantro, as well as Pumpkin Seeds for garnish if desired.  Voila  :)
