Salted Caramel Pumpkin Muffins







     Pumpkin knows no bounds, I don't care what month it is, it's always a winner in my book...although I will admit that Fall holds a special place in my orange circle lovin' heart.  That admiration will spill over onto these Salted Caramel Pumpkin Muffins when you find out that each of these 6 delights are only 154 calories, 3.5g net carbs and 8.6g protein.  You won't have to make up a calendar occasion, these are perfect 24/7/365!  Add a Tablespoon of Butter to make it an awesome #keto treat.  :)

Ingredients for 6 Muffins~
1 scoop Quest Salted Caramel Protein Powder
1 jumbo Egg
1/2 cup Pumpkin
1/2 cup reduced fat Let's Do Organic Unsweetened Coconut Shred
1/4 cup Almond Flour
1/4 cup Swerve Granular Erythritol
2 Tablespoons Coconut Oil, melted
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1/4 cup powdered Peanut Butter
3 Tablespoons Water
30 Lily's Stevia Sweetened Dark Chocolate Chips

     Mix first set of ingredients til well combined, add equal amount to 6 Silpat lined muffin tins.  Bake at 350 for 20 minutes.  Meanwhile stir PB and Water together til frosting consistency and frost cooled Muffins, top each Muffin with 5 Chocolate Chips.  Enjoy  :)
