Raspberry Lemon Pancakes







     I love the flavors of warm weather, and what I love even more is combining them together into one happy plateful of yum.  Such is the case with my Raspberry Lemon Pancakes, and the mad love will continue when I tell you the entire stack is only 305 calories, 20g net carbs and 46g protein...yes, FOURTY SIX!!!  What a way to start your day  :)

Ingredients for one serving~
1/4 cup Egg Whites
1/4 cup low fat Cottage Cheese
1 scoop Quest Salted Caramel Protein Powder
Dash Neilsen Massey Lemon Extract
2oz fresh Raspberries
5.3oz Yoplait Greek 100 calories Lemon Yogurt
Lemon Zest for garnish, if desired

     Mix together Egg Whites, Cottage Cheese, Protein Powder and Extract til well blended.  Divide batter into 3 equal portions, about a 1/3 cup each and drop batter onto Pam coated hot skillet, take a 1/4 of the Raspberries and break apart and lay on top of pancake, then flip when bottom is done cooking.  After pancake done cooking on both sides, repeat with remaining batter.  When cooled frost each pancake with a 1/3 of the Yogurt and stack, top with remaining Raspberries and Lemon Zest if desired.  Enjoy  :)
