Healthy Reuben Casserole








     Wanna know what lucky Leprechauns desire on St Pat's!?  Healthy Reuben Casserole, duh!  We all want our pot of gold at the end of the rainbow,  but I want to count my coins while eating my Irish dinner shadowed by a vase of four leaf clover...is that asking too much!?  And, all you Shamrock lovers will be green with envy if you miss out on this good for you make over, each hearty piece is only 270 calories, 17g net carbs and 25g protein!  If you want to get lucky, you will have Healthy Reuben Casserole for St. Patrick's Day too!  ;)

Ingredients for 8 hearty pieces~
6 slices Beefstock Soft Rye Bread, toasted
32oz Sauerkraut, drained in strainer for 2-3 hours
1 cup diced Dill Pickles Spears, drained on paper towel 2-3 hours
2 jumbo Eggs
1/3 cup Kraft Fat Free Thousand Island Dressing
1/4 cup Mustard
1 pound Boars Head THINLY (almost crumbly) sliced Pastrami, divided into two equal halves
16 Sargento Ultra Thin Swiss Cheese slices

     Break up 5 of the 6 slices of toasted Rye Bread into bottom of Pam coated 9X13 pan.  Top with drained Sauerkraut (making sure to squeeze any excess liquid beforehand), then layer with drained diced Pickles.  Stir together Eggs, Salad Dressing and Mustard til smooth and pour on top and spread evenly over casserole base.  Bake at 425 for 20 minutes.  Remove and top with half the Pastrami, then layer with 8 slices of Swiss, repeat with remaining Pastrami and Swiss to form two layers.  Finely dice last piece of toasted Rye and sprinkle on top, continue to bake at 425 for another 12 minutes.  Garnish with extra Salad Dressing if desired (not included in macros).  Enjoy  :)
