Ganache Frosted Custard Cake







     Every once in a while I like to mix things up a bit!  Such was the case with this Ganache Frosted Custard Cake...what you don't know is that this is a Crock Pot Cake as well as a Poke Cake all rolled into one mouth full of deliciousness!  And your mouth won't just be used for eating, it will be busy gasping at the macros~each of the 8 pieces are only 170 calories, 5g net carbs and 10g protein.  As an added bonus, learn my trick for making a healthy low calorie Custard.  Try a Crock Pot Polk Cake today and see how it feels to take a walk on the wild side and then you can mix your things up a bit too!  ;)

Ingredients for 8 servings~
1/3 cup Coconut Butter, softened
2 jumbo Eggs
7oz 2% Fage Greek Yogurt
1 scoop Quest Salted Caramel Protein Powder
1/3 cup 30 cal/cup Blue Diamond Almond Milk
1/3 cup Swerve Confectioners Erythritol
1/4 cup Nutiva Coconut Flour
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1/2 cup Fat Free Half & Half
1 jumbo Egg YOLK (Yolk ONLY)
2 Tablespoons Swerve Confectioners Erythritol
Dash Salt

3 squares Lily's Dark Stevia Sweetened Premium Baking Bar (or 3 Tablespoons Chips)
2 Tablespoons Fat Free Half & Half
1 Tablespoon Swerve Confectioners Erythritol

     Blend all ingredients in first set of ingredients and pour into parchment lined Crock Pot and bake for 4 hours on low.  Meanwhile, using second set of ingredients,  bring Half & Half to simmer~while heating, whisk Egg Yolk with Confectioners and Salt, set aside.  Once Cream has started to simmer, slowly whisk half into Egg Yolk mixture to temper, then add remaining half and blend well.  Return all mixture to sauce pan and continue to cook until thickened, stirring constantly, about 4-5 minutes and making sure not to curdle.  Refrigerate 3 hours to thicken and set.  Remove Cake from Crock Pot and poke several holes in cake with stem of chop stick, when cooled pour Custard over top and let settle into holes.  Lastly, put third set of ingredients in microwave safe bowl and heat til Chocolate softened, stir to combine and frost top of Cake, set in fridge to chill.  Garnish with Whipped Topping if desired.  Enjoy  :)
