Pumpkin Pie Cheesecake Muffins







     They say a picture is worth a thousand words, what words do the pictures of these Pumpkin Pie Cheese Cake Muffins say to you!?  Amazing, wonderful, fabulous, delicious, mouth watering...if those are the adjectives you came up with you would be correct!  Then wait til you find out the macros on these savory delights, each of the 12 muffins are only 180 calories, 5.5g net carbs and 9g protein.  These decorative wonders are perfect for any festive occasion or just a daily pick me up!  :)

Ingredients for 12 Muffins~
1/3 cup Coconut Oil, softened
1 Extra Large Egg
3/4 cup Pumpkin
1/2 cup 35 cal/cup Cashew Milk
1 scoop Quest Salted Caramel Protein Powder
1/2 cup Almond Meal Flour
1/4 cup Oat Flour
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
2 teaspoons Pumpkin Pie Spice
1 teaspoon Baking Powder
Dash Vanilla

4oz Cream Cheese, softened to room temperature
6oz Fage 2% Greek Yogurt

1 Quest Pumpkin Pie Protein Bar, diced

     Beat together first set of ingredients, equally add to 12 silpat lined cupcake tin.  Next, beat second set of ingredients and equally add to the middle of each cupcake, making a small well to fill in center.  Sprinkle equally with Pumpkin Pie pieces on each of the 12 cupcakes.  Bake at 325 for 35 minutes.  Cool and enjoy  ;)
