Chocolate Chip Pumpkin Granola Squares






     Granola comes in many forms~crumbles, bars, squares, and cereal...but the way I like it best is simply in my mouth!  Such is the case with Chocolate Chip Pumpkin Granola Squares.  This may be one of the most delicious things I have ever made!  While this is a higher carb to protein ratio than most of my recipes, it's still not bad, and if you use it as a topping on things such as Fage Greek Yogurt, that helps re tilt the ratio back to my comfort zone!  By itself, for a 24th of the recipe it is 213 calories, 13g net carbs and 7.5g protein.  This it totally worth every macro and an exercise is moderation!  Try this one today  ;)

Ingredients for 24 Squares~
1 cup (about 35) Dates, pitted
1/2 cup Cashews
1 cup Pumpkin Seeds
1 cup Almonds

1 cup Lily's Stevia Sweetened Dark Chocolate Chips
1/2 cup Sunflower Seeds
1/2 cup Pumpkin Seeds
1 teaspoon Cinnamon
1 teaspoon Salt

1/2 cup Pumpkin Spice G Butter (sub with melted Coconut Oil)
2 Tablespoons Cocoa Butter, melted

     Grind all ingredients in first section in food processor to rice like consistency, stir in all ingredients in second section and add to large bowl.  Meanwhile, stir together Pumpkin G Butter and melted Cocoa Butter and stir til smooth and pour over nut mixture, mixing thoroughly.  Add to Parchment Paper lined 9X13 dish, pat down firmly and bake at 350 for 18-20 minutes or til golden brown.  Remove, cool and chill.  When ready cut into 24 equal squares and wrap each individual square in saran wrap and store in fridge.  Eat alone or crumble on your favorite food (I loved it with Fage Greek Yogurt).  Enjoy  :)
