Snickerdoodle Chocolate Chip Cookies






     I'm not sure it gets any better than this... so much so they are a little dangerous to have around!  Snickerdoodle Chocolate Chip Cookies have changed my life, ... in a good way!  For each of the 18 cookies it is only 71 calories, 1.8g net carbs and 3g protein.  I call that sweet success...pun intended!  Hopefully you will have more control than me and not eat 2/3 of the batch in one afternoon (yes, that is 12 for those of you weak in math)... I did skip lunch...if that changes your opinion of me ...actually that probably would have happened regardless... they were that good!   ;)

Ingredients for 18 cookies~
1/3 cup Coconut Oil, melted
1 jumbo Egg
1 scoop PEScience Snickerdoodle Protein Powder
1/4 cup Coconut Flour
1/3 cup Swerve Granular Erythritol
1/2 cup 30 cal/cup Almond Milk
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
2 Tablespoons (120 chips) Lily's Stevia Sweetened Dark Chocolate Chips

     Melt Coconut Oil in microwave for 20 seconds, stir in Egg, Protein Powder, Coconut Flour, Erythritol, Almond Milk, Baking Powder, Salt, Cinnamon and Vanilla til well incorporated, fold in Chocolate Chips.  Drop onto Silpat lined cookie sheet in 18 equal pieces and bake at 375 for 8-10 minutes, watching to not over bake as protein baking can be drying.  Best to slightly under bake as it will continue to cook as it cools, flavor much better if slightly under baked as well.  Enjoy  ;)
