Tilapia Fish Cakes






     If you love Bang Bang Shrimp from Bone Fish Grill then you are in for a real treat with my Tilapia Fish Cakes!  I am not a Crab Cake fan, but I gotta tell you these blew my fins off!  The Hubs said they taste like they were from a restaurant... why thank you dear!  Each 1/3 cup worth of cake is only 113 calories, 2.6g net carbs and 16.3g protein.  This batch makes 6 servings, with 2 cakes per serving, for a total of 12 cakes.  So if you want to impress your friends, invite them over for a night of socializing and enjoy a healthy fun dinner all at the same time!  :)

Ingredients for 6 servings (12 total cakes)~
2 Zucchini
1.5 pounds Tilapia
1 bag Quest Sea Salt Protein Chips, crushed
1/4 cup Wheat Germ, (if this is not handy, add a second bag of crushed Quest Chips, maybe a Sour Cream and Onion)
3 Jumbo Eggs
1/3 cup shredded Parmesan
1/4 cup Walden Farms Mayo
1/2 Tablespoon Sriracha
Diced Green Onion and Red Bell Pepper, for garnish if desired
Mixed Green Salad to serve Cakes on, if desired

     Grate both Zucchini into dish towel lined strainer, squeeze excess liquid from towel.  If time, allow Zucchini to drain all day in sink and give it one last squeeze before using in recipe, making sure to get it as dry as possible.  Meanwhile, bake Tilapia on foil lined pan at 450 for 15-20 minutes or until flaky (I sprinkled mine with some seasoning salt, but this is optional.  Season with your preference of flavor).  Remove and drain any excess liquid, then break the fish into crumbly pieces and chill til cooled.  After chilled, add dried Zucchini, crushed Quest Chips, Wheat Germ, Eggs and Parmesan.  Drop by 1/3 cup onto foil lined pan to make 12 cakes, pat down slightly.  Bake at 425 for 25-30 minutes or til golden brown.  While baking make your Remoulade Sauce by stirring together the Walden Farms Mayo and Sriracha, edit Sriracha to meet your heat desires, store in fridge til ready to use.  After Cakes are done baking, remove and serve on bed of chopped Salad if desired, drizzle with Remoulade Sauce and garnish with chopped Green Onion and Red Bell Pepper, if desired.  Enjoy  :)
