Apple Pie Cheesecake Muffins






     If you could have Apple Pie and Cheesecake all in a Muffin every single day, would you rethink life and all things beautiful!?  The world may simply combust into a basket full of kittens, and everyone would live happily ever after.  And as if this scenario isn't sappy enough, I'm going to sweeten the pot by revealing that each muffin is only 116.5 calories, 5.2g net carbs and 11.4g protein.  Can you give me one reason you won't be trying this out today!?  #bakingforsmiles

Ingredients for 6 Muffins~
2oz Fat Free Cream Cheese, softened
1 Tablespoon Cinnamon Roll Sweet Spreads, melted
1 Jumbo Egg
1 scoop Quest Vanilla Milkshake Protein Powder
1/4 cup Nutiva Coconut Flour
1/4 cup 25 cal/cup Silk Cashew Milk
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt or Lite Salt
Dash Vanilla
Dash Cinnamon
1 Quest Apple Pie Protein Bar, chopped into small pieces
1/2 small Granny Smith Apple, finely diced

     Mix first 11 ingredients, gently stir in Apple Pie pieces and drop by 1/4 cup into 6 lined cupcake tins, top evenly with fresh Granny Smith Apple bits and gently pat into batter.  Bake at 350 for 20 minutes.  Remove, and store any leftovers in fridge.  Enjoy  :)
