Princess Strawberry Cakes with Cream Cheese Frosting







     Working with Pea Protein was a first for me, and I "gotsta" say it was way better than expected!!!  Let's face it, anything Strawberry has to be wonderful!  Vitacost sent me some Earthblends Strawberry Pea Protein and so of course I had to create Princess Strawberry Cakes with Cream Cheese Frosting.  It's an unspoken culinary law that all things Strawberry must be topped with some form of Cream Cheese.  This recipe makes 12 cakes with 2 Tablespoons frosting for 112 calories, 6.5g net carbs and 11.4g protein.  Strawberries ain't just for Summer  ;)

Ingredients~
1 Strawberry Cheesecake Quest Bar
2 Tablespoons 30 cal/cup Almond Milk
1 Tablespoon Coconut Butter
1/2 cup pureed Strawberries
5.3oz Dannon's Strawberry Light&Fit Greek Yogurt
1 Jumbo Egg
1/3 cup Egg Whites
1/3 cup Oat Flour
1 scoop Strawberry Earthblends Pea Protein Powder
2 Tablespoons Nutiva Coconut Four
1 teaspoon Stevia
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla

Ingredients for Cream Cheese Frosting~
2 Tablespoons Sweet It (purchased at www.MySweetSolution.com)
1 scoop Earthblends Strawberry Pea Protein Powder
4oz Fat Free Cream Cheese, softened to room temperature
5.3oz Dannon Strawberry Light&Fit Greek Yogurt
1 Tablespoon Coconut Butter, melted
2 Tablespoons Swerve Confectioners Style Erythritol
1 teaspoon Stevia

     Tear Quest Bar into small pieces and add Almond Milk to bowl, microwave for 30 seconds and stir til smooth, then add to food processor along with all the other cake ingredients, blend til thoroughly combined.  Add 3 Tablespoons of batter to Silpat lined cupcake tin and bake at 350 for 17 minutes, remove and cool.  Meanwhile, add Sweet it to bowl and microwave 30 seconds, pour into mini food processor or Magic Bullet along with Protein Powder and blend thoroughly.  Add rest of Frosting ingredients and continue to blend til thoroughly combined and smooth.  Chill til firm, then pipe 2 Tablespoons on each little cake.  Garnish with fresh Strawberries, if desired.  Enjoy  ;)
