Steven's Shrimp Stir Fry






     It pays to make new friends... especially when they can cook and are willing to share ideas with you!!!  Steven's Shrimp Stir Fry was inspired from a 22 year old 6'3" dude that lifts weights and needs his protein, and lots of it!!!  So I stole his recipe and added  a few "tweeks" (not to be confused with "twerks") and some "riced" Cauliflower, ... the results delivered the birth of a high protein low carb low calorie dinner friendly flavorful family favorite!!!  Thanks, Steven ... come around anytime!!!  :)

Ingredients~
1-2 Tablespoons Sesame Oil
1 Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
1.5 pounds Chicken Tenders, boneless and skinless
2 cups Broccoli Florets
2 cups Baby Spinach Leaves
1 Red Bell Pepper, sliced
4 cups "Riced" Cauliflower~ put chopped Cauliflower in food processor til rice like texture
1/2-1 cup Egg Whites, desired amount
1 pound Medium Shrimp, shelled with tails off
1/4 cup light Soy Sauce
Diced Green Onions, for garnish
Salt and Pepper to taste

     Add Sesame Oil to skillet along with diced Onion and Garlic til golden brown.  Add Chicken and cook thoroughly, using spatula to cut into bite size pieces in skillet.  Add Broccoli til crisp tender, then add Spinach Leaves and Bell Pepper slices til softened.  Add "Riced" Cauliflower to skillet and add lid til softened, finish by adding Egg Whites, Shrimp and Soy Sauce~cook til Eggs are cooked thru and Shrimp is pink.  Serve and garnish with Green Onions, Salt and Pepper to taste.  Enjoy  :)
