Fudge Chocolate Chip Brownies with Raspberries and Cream Cheese Whipped Topping






     Fudge Chocolate Chip Brownies with Raspberries and Cream Cheese Whipped Topping!!!  I love love love mixing fruit with chocolate, and Raspberries are at the top of the list!  When I was in Middle School a boy gave me a box of chocolates with fruit creme centers for Valentines Day and I never spoke to him again, ... things were just not the same after I found that disgusting gift of Russell Stovers in my locker... but I have evolved since then and have come to really like the combo ... if anyone runs into Bobby, can you tell him I'm sorry...  This recipe makes 9 Brownies, and for each Brownie with a Tablespoon of Whipped Topping and 10 Raspberries it is 125.5 calories, 5.3g net carbs and 14.1g protein.  Don't live with regret, ....next time try a little fruit with your chocolate  ;)

Ingredients for Brownies~
1 Double Chocolate Chunk Quest Bar, torn into pieces
1/2 cup 30 cal/cup Almond Milk
1/2 Tablespoon Coconut Oil
5.3oz Black Forrest Carbmasters Kroger Yogurt, or Plain Greek Yogurt
1/3 cup Egg Whites
2 scoops Molten Chocolate Cellucor Protein Powder, found at Vitacost.com
1/3 cup Oat Flour, found at Vitacost.com
1/4 cup Cacao Powder, found at Vitacost.com
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
60 Stevia Sweetened Lily's Dark Chocolate Chips, found at Vitacost.com
Garnish with a Tablespoon Cream Cheese Whipped Topping ( recipe below)
Garnish with 10 Raspberries per Brownie

     Melt Quest Bar, Coconut Oil and Almond Milk in microwave safe bowl for 30 seconds, stir til smooth.  Repeat if necessary.  Stir in Yogurt, Egg Whites, Protein Powder, Oats, Cacao Powder, Baking Powder, Cinnamon and Vanilla.  Pour into Pam coated 8 X 8 pan and bake at 325 for 15 minutes to get a Fudge Brownie consistency.  It's vital to not over bake Protein Powder products or the results are VERY VERY dry ( believe me, I've learned the hard way).  Remove and sprinkle with Chocolate Chips.  Cool and top each piece with 10 Raspberries and 1 Tablespoon Cream Cheese Whipped Topping.  Enjoy  ;)

Ingredients for Frosting~
2 Tablespoons Fat Free Cream Cheese, brought to room temperature
1 Tablespoon Vanilla Casein Protein Powder, Gold Standard, found at Vitacost.com
1 Tablespoon Cinnamon Swirl Cellucor Protein Powder, found at Vitacost.com
2 Tablespoons Low Fat Cottage Cheese
2 Tablespoon 30 cal/cup Almond Milk
5 drops Toffee Stevia

     Blend thoroughly in Magic Bullet.
