Pumpkin Protein Pancakes with Maple Date Syrup and Walnuts






     What better way to start your day than with Pumpkin Pancakes with a little Maple Date Syrup and Walnuts!!!???  Sign me up !!! All this for 304 calories, 12g net carbs and a whopping 45g protein.  ;)

Ingredients~
1 scoop Vanilla Protein Powder
1/4 cup Egg Whites
2 Tablespoons Ground Flax Seed
1/4 cup Pumpkin Puree
6oz Low Carb Pumpkin Yogurt, divided equally
1/2 teaspoon Baking Powder
Dash Pumpkin Pie Spice
Dash Vanilla
1 Tablespoon Maple Date Syrup ( recipe below)
1 Walnut Half, crumbled
Soy Whip for garnish, if desired

     Mix first 8 ingredients together for pancake batter making sure to only use half of the yogurt, and scoop 1/4 cup batter into Pam coated skillet and cook til golden brown on each side, repeat 3 more times.  Stack the 4 pancakes and spread the remaining 3oz of yogurt between each pancake.  Top with 1 Tablespoon Maple Date Syrup and Walnut pieces and finish with a spritz of Soy Whip if desired.  Enjoy this little piece of heaven  ;)

Ingredients for Maple Date Cream~
4 Medjool Dates, soaked in water for 30 minutes, drain water and remove pit
1 Tablespoon Erythritol
1/4 teaspoon Maple Extract
1 teaspoon French Vanilla Stevia
Dash Cinnamon
Dash Vanilla
1 cup 30 cal/cup Almond Milk

     After draining water off Dates, remove pit and put in Magic Bullet along with the rest of the ingredients and blend til well combined.  Store in fridge, and use as you would any Maple Syrup.  Each Tablespoon has 12.5 calories, 2.8g carbs, and .13g protein.  Enjoy  ;)
