Pear Pumpkin Cake with Maple Date Sauce and Cashew Whipped Cream







     Pear Pumpkin Cake with Maple Date Sauce and Cashew Whipped Cream, ... Hello Fall desserts... get into my belly !!!  ;)  This recipe makes 9 pieces, each piece has only 125 calories, 14g net carbs and 7g protein.

Ingredients for Cake~
2 Medjool Dates, soaked in water for 30 minutes, drain and pit
1 cup Garbanzo Beans
1/4 cup Almond Milk, found at Vitacost.com
1/2 cup Pumpkin
1 scoop Vanilla Milkshake Quest Protein Powder
1/2 cup Egg Whites
1/2 teaspoon Baking Powder, found at Vitacost.com
Dash Cinnamon, found at Vitacost.com
Dash Vanilla, found at Vitacost.com 
1 teaspoon French Vanilla Stevia, found at Vitacost.com
1 Tablespoon Erythritol, plus more for garnish, found at Vitacost.com
4oz fresh Pear, sliced
1 Tablespoon Maple Date Syrup (recipe below)
1 Tablespoon Cashew Whipped Cream (recipe below)

     Grind all ingredients in a Magic Bullet except for Pear, pour into Pam sprayed 8 X 8 pan.  Lay Pear slices atop cake batter and sprinkle Pears with a smidgen of Erythritol and Cinnamon and bake at 350 for 20 minutes.  Remove and cool.  Once cooled, cut into individual piece and top with a Tablespoon Maple Date Sauce and a Tablespoon of Cashew Whipped Cream.  Store in fridge.  Enjoy  ;)

Ingredients for the Cashew Whipped Cream~
1/2 cup Cashew pieces
2 Tablespoons Almond Milk
1 Tablespoon Erythritol
Very scant dash Cinnamon
Very scant dash Vanilla

     Soak Cashew pieces in water for 4 hours or overnight, drain and blend with the rest of the ingredients in the Magic Bullet til smooth, chill in fridge til set.  Makes 10 Tablespoons


Ingredients for Maple Date Sauce~
4 Medjool Dates, soaked in water for 30 minutes, drain water and remove pit
1 Tablespoon Erythritol
1/4 teaspoon Maple Extract
1 teaspoon French Vanilla Stevia
Dash Cinnamon
Dash Vanilla
1 cup 30 cal/cup Almond Milk

     After draining water off Dates, remove pit and put in Magic Bullet along with the rest of the ingredients and blend til well combined.  Store in fridge, and use as you would any Maple Syrup.  Each Tablespoon has 12.5 calories, 2.8g carbs, and .13g protein.  Enjoy :)

  2. I tried anyway. Heaven knows why. Maybe just to see if I could or maybe because I was tired of working for the man hating my job and staying in debt. The first few months I just kind of half assed it. Like I said, I was mainly doing it for me. As I started to earn an income, make connections, helping people and getting results of my own...I really realized the potential.
