Fall Harvest Stuffed Chicken Breast








     If you like a good craft project in the kitchen then you will LOVE this fun dish!!!  Hello Fall Harvest Stuffed Chicken Breast!!!  First of all, make sure you buy hearty thick Chicken Breast that are easy to split and make a pocket!!!  Second of all, make sure you're lookin good at the meat counter because you will need to beg the butcher for some cooking twine ... thank you eyelash extensions for all your help today in getting my free twine...  ;)

Ingredients~
1 yellow Onion, chopped
1 Tablespoon EVOO
1 Tablespoon chopped jarred Garlic
Dash Cayenne
Dash Salt
1 small Sweet Potato, peeled and chopped
1 large Kale Leaf, torn into small pieces
1/2 Sweet Tango Apple, or Fuji, diced into small pieces
3 LARGE Chicken Breasts
Cooking Twine, cut into long enough pieces to wrap around stuffed Chicken Breast 4-5 times

     Heat EVOO in skillet and add Onion, Garlic, Salt and Cayenne and cook til golden brown.  Then add diced peeled Sweet Potato and cook til softened, add torn Kale pieces and cook til wilted, lastly add Apple pieces til softened.  Cut a pocket in the side of each Chicken Breast and lay open with Twine pieces laying under each Breast, put a 1/3 of the mixture in each pocket and fold closed, then tie Twine in a firm knot with each of the 4-5 pieces of string.  Spray Cast Iron Skillet with Pam or scant amount of EVOO and sear stuffed Chicken Breast on 3 sides til well browned, then cover skillet with aluminum foil and finish by baking in oven at 375 for 35 minutes.  Remove and let set for 5 more minutes.  ( I served mine with roasted brusell sprouts)  Serve and Enjoy  ;)
