Olathe Corn and Zucchini Feta Salad with Balsamic Glaze












     Corn is King in summer!!!  Even confirmed vegetable haters drool over fresh sweet corn slathered with butter, salt and pepper!  Although some may scoff at our American passion of corn and say that it is fit for livestock only, once you try this specialty Olathe Corn then all will "feel the undeniable love" !!!  At the Corn Festival ( yes, there is a Festival the first Saturday in August every year in this town of 1500 with over 20,000 participants gathering to celebrate) in Olathe, Colorado, corn rules the town!!!  The farmers have sold most of the crop to the Kroger supermarket chain, which includes our local Dillons stores. This sweet corn is renowned for its tender and succulent flavor.  This is only available a few short weeks at the end of summer, which adds to its special nature. PLEASE PLEASE PLEASE make sure to stop by and pick up a few husks to try today while you still have the chance!!!  In good health~paige  ;)

Ingredients~
1 Tablespoon EVOO
1 Yellow Onion, diced
Large handful of Baby Carrots, diced
Sriracha, to taste
Heaping teaspoon chopped jarred garlic
2 Zucchini, diced
1 carton sliced Mushrooms
1 Yellow Bell Pepper, sliced
3 ears Olathe Corn, husked, boiled for 1 min 30 seconds, drained and cut from cob
Balsamic Vinegar
Cherry Tomatoes, desired amount
Reduced Fat Feta Cheese, desired amount
1/4 pound, cooked and crumbled Fresh Market Turkey Bacon~ Fresh Market from the meat counter is the best that I have ever found
Balsamic Glaze

     Heat EVOOin skillet and add diced onion, garlic and dash Sriracha til golden brown. Add carrots and cook til crisp tender.  Add mushrooms, and bell pepper and zucchini til crisp tender, then stir in cooked and cut corn.  Pour desired amount of Balsamic Vinegar to pan and cook off.  Then remove from heat and top with cherry tomato's, Feta, and crumbled bacon.  Drizzle with Balsamic Glaze and ENJOY !!!  This is outta this world delish !!!  ;)
