Balsamic Cherry Pork Chop's








My husband hates fruit with his meat, ... but I love it ... so I still serve it to him...  This is not Burger King and you can't have it your way... It's my way or nuthin at all ...   That being said, I really enjoyed the sweet and tangy flavors that came together with the Cherries and the Balsamic Vinegar.  If you try this combo out, let me know what you think ... ( but only if you agree with me)!  ;)

Ingredients~
1 Large Yellow Onion ( mine was a pound), diced
Tablespoon EVOO
Heaping teaspoon chopped jarred garlic
1 1/4 pound Pork Loin Chops
1/3 cup high quality Balsamic Vinegar
1/4 cup thawed Sweet Dark Cherries, diced

     Heat EVOO in large skillet and add onion and garlic til golden brown.  This is a slow process and may take 20-30 minutes, stirring often.  After cooked thru, scoot onions to one side of pan and add Pork Chops to pan and let cook til browned, when ready flip and cook on other side til browned thru.  Add Balsamic Vinegar to the pan and let it simmer til reduced.  When Pork Chops are finished cooking and Balsamic has reduced to syrupy consistency, then plate the Chops and top with the Onions and finish off by adding the chopped Cherries as a garnish.  Serve with your favorite greens.  Enjoy  ;)
