Spicy Cream Cheese Chicken Pasta











     This might have a lot of ingredients, ... but sometimes its just worth the extra effort !!!  So settle in to a late afternoon of puttering in the kitchen to create this wonderful hearty healthy comfort pasta !  There are 7 servings in the dish, and each serving has 396 calories, 41.2g carbs and 35g protein.  :)

Ingredients~
14oz~ 7 serving box of whole wheat pasta, cooked al dente' according to directions
1 Tablespoon EVOO
1 cup or 6oz chopped Red Onion
Heaping teaspoon chopped jarred garlic
Sriracha to taste ( be generous with this if you want the spicy kick)
1.5 pounds Grilled Chicken Breast, sliced
3.5 cups or 10oz chopped fresh Broccoli
8oz sliced Mushrooms
4oz or 3/4 cup Orange Bell Pepper, sliced
4oz or 3/4 cup Yellow Bell Pepper, sliced
1.5 cups diced Roma Tomato
1 teaspoon Chicken Base dissolved in 1 cup water
4 Laughing Cow Cream Cheese Wedges
1/2 cup Fage 0% Fat Greek Yogurt (not pictured)
1 Tablespoon Coconut Flour
1/3 cup diced Green Onion
Salt and Pepper to taste

     Prep all vegetables, then cook your pasta in salted water according to directions.  While pasta cooking, make a slurry of the yogurt, flour and cream cheese in your Magic Bullet, set aside.  Heat large skillet and add EVOO, onion, garlic and Sriracha and cook til golden brown.  Add mushrooms and cook til fully sauteed. Add Broccoli and Peppers, til crisp tender, then add chopped tomatoes and heat thru for another 3-4 minutes, stirring often.  Reduce heat to medium low and add chicken broth and creamy slurry, stirring for about 2 more minutes. Pour drained pasta in big pasta bowl, top with vegetable mixture, then lay Grilled Chicken Breast slices on top, and finish garnishing with diced green onions.  Enjoy  ;)
