Sausage, Spinach and Egg stuffed Red Bell Pepper Breakfast














   How would you like comfort food for breakfast !?  I sure do !!!  I was surfing the net and came across a few ideas to put together to make this nice little honey this morning for breakfast !!! ( BTW, lovin' the fried egg motif on top of things lately...)  Check it out for 340 calories, 14.5g carbs and 22g protein !!!  ;)

Ingredients~
1 teaspoon EVOO
1/4 cup yellow Onion
Heaping teaspoon chopped jarred garlic
3-5 drops Sriracha, or to taste
1/4 cup Mushrooms
1 medium Red Bell Pepper, lid cut off and inside cleaned out with top slice diced for cooking
2- 3 cups Baby Spinach leaves
1 Meatless Soy Pattie (57g)
1 large egg
1 Tablespoon shredded Cheddar

     Heat EVOO in skillet and add onions, garlic and Sriracha to taste til golden brown.  Then add the Bell Pepper diced off the top slice of the Pepper ( really hope that makes sense, look at the pictures above for help if necessary... ). Add baby spinach leaves to wilt, then crumble soy patty in skillet and mix thoroughly.  Fill Pepper cavity with mixture and top with cracked egg, salt and pepper.  Bake at 450 for 20 minutes or til egg is cooked, then top with a Tablespoon Shredded Cheddar Cheese after baking.  Slice in half and Enjoy  ;)
