Tilapia Milanese with Kale and Tomatoes






     I love following the Skinny Taste Blog, she has so many great ideas for cutting fat and calories.  One HUGE tip I picked up from her was using the PAM EVOO to use for spraying each side of your fish and sear it in that manner vs frying in EVOO.  Talk about a tremendous calorie saving !!!  Next time you cook white fish give that method a try!  ;)

Ingredients for Salad~
Kale, torn in pieces
Romaine, torn in pieces
Baby Spinach leaves
Baby Petite Carrots
Sliced Green Onions
Cilantro Leaves
Diced Tomatoes
Shaved Parmesan
Kraft Roasted Red Pepper Dressing
Salt and Pepper to taste

     Toss together all greens, carrots and onions.  Top each individual salad with diced tomatoes, 1 Tablespoon shaved parmesan and Light Salad Dressing.

Ingredients for Tilapia~
4-6 Tilapia Filets
2 egg whites, whipped
2/3 cup Panko bread crumbs seasoned with salt, pepper and garlic powder
Sliced Lemon
Pam EVOO

     Dip Tilapia in egg whites, followed by seasoned Panko bread crumbs.  Spray thoroughly with Pam EVOO on each side of filet and cook in hot skillet for 4-5 minutes on each side or til flakes easily.  Top with sliced lemon.  Enjoy  ;)
